Sweet, Sour and Smokey Linguiça (GF)

Ingredients:

For the Vegan Linguiça:

  • 1 cup cooked lentils
  • 1/2 cup cooked black beans
  • 1/4 cup gluten-free breadcrumbs (made from gluten-free bread)
  • 2 tablespoons tomato paste
  • 2 tablespoons liquid smoke
  • 2 tablespoons maple syrup or agave nectar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon tamari or soy sauce (ensure it’s gluten-free)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper to taste

For the Sweet and Sour Sauce:

  • 1/4 cup pineapple juice
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup or agave nectar
  • 1 tablespoon tomato paste
  • 1 tablespoon cornstarch (ensure it’s gluten-free)
  • 1 tablespoon water

Instructions:

For the Vegan Linguiça:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine all the ingredients for the Vegan Linguiça. Pulse until well combined and a sticky dough-like consistency is formed.
  3. Scoop out about 2 tablespoons of the mixture and shape it into a linguiça sausage link shape using your hands. Repeat with the remaining mixture to make the rest of the sausages.

  4. Remove the saucepan from heat and let the sweet and sour sauce cool slightly.

To assemble:

  1. Once the linguiça sausages are cooked, remove them from the oven and let them cool slightly.
  2. In a large bowl, toss the linguiça sausages with the sweet and sour sauce until they are well coated.
