Chipotle Sausage (GF)

Ingredients:

For the Vegan Sausage:

  • 1 cup cooked quinoa
  • 1/2 cup cooked black beans
  • 1/4 cup sun-dried tomatoes, soaked in hot water for 15 minutes and drained
  • 1/4 cup gluten-free breadcrumbs (made from gluten-free bread)
  • 2 tablespoons ground flaxseed mixed with 6 tablespoons water (as flaxseed egg)
  • 2 tablespoons tomato paste
  • 2 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon chipotle powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a food processor, combine all the ingredients for the Vegan Sausage. Pulse until well combined and a dough-like consistency is formed.
  2. Scoop out about 1/4 cup of the mixture and shape it into a sausage link shape using your hands. Repeat with the remaining mixture to make the rest of the sausages.
  3. Heat a pan with a little olive oil over medium heat. Add the sausages to the pan and cook for 4-5 minutes on each side, until browned and crispy.
  4. Once the sausages are cooked, remove them from the pan and let them cool slightly before serving.
