Currywurst Sausage (GF)

Ingredients:

For the Vegan Sausage:

  • 1 cup cooked red lentils
  • 1/2 cup cooked black beans
  • 1/2 cup cooked brown rice
  • 1/4 cup tomato paste
  • 1/4 cup gluten-free breadcrumbs (made from gluten-free bread)
  • 2 tablespoons nutritional yeast
  • 2 tablespoons coconut flour
  • 1 tablespoon tamari (gluten-free soy sauce)
  • 1 tablespoon olive oil
  • 1 tablespoon curry powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

For the Currywurst Sauce:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon curry powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1 cup tomato puree
  • 1 tablespoon maple syrup or agave nectar
  • 1 tablespoon tamari (gluten-free soy sauce)
  • Salt and pepper, to taste
  • Vegan mayonnaise, for serving (optional)
  • Fresh parsley or cilantro, for garnish (optional)

Instructions:

  1. In a large mixing bowl, combine all the ingredients for the Vegan Sausages. Mix well to form a dough-like consistency.
  2. Using your hands, shape the mixture into sausage-shaped patties and place them on a plate. Chill the sausages in the refrigerator for at least 30 minutes to firm up.
  3. While the sausages are chilling, prepare the Currywurst Sauce. Heat the olive oil in a saucepan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  4. Add the minced garlic, tomato paste, curry powder, smoked paprika, cumin, coriander, turmeric, paprika, and cayenne pepper (if using) to the saucepan. Cook for 2-3 minutes, stirring frequently, until fragrant.
  5. Stir in the tomato puree, maple syrup or agave nectar, and tamari. Bring the sauce to a simmer and let it cook for 10-15 minutes, stirring occasionally, until thickened. Season with salt and pepper to taste.
  6. In a separate pan, heat some olive oil over medium heat. Add the chilled Vegan Sausages and cook for 4-5 minutes on each side, until golden brown and crispy.
  7. Once the sausages are cooked, slice them into smaller pieces, if desired.
  8. To serve, place the cooked Vegan Sausages on a plate and drizzle with the Currywurst Sauce. You can also dollop some vegan mayonnaise on top for added creaminess, if desired. Garnish with fresh parsley or cilantro, if desired.
